Royal Kombu (lat. Saccharina japonica)

Description

An edible brown seaweed of the class Phaeophyceae (brown algae). It is grown in coastal waters of China, Japan, and Korea, attached to floating ropes. It reaches a length of up to 20 m and a width of up to 30 m.

It is dark green to dark brown in color.

Composition

A characteristic of kombu algae is its high iodine content.

It is rich in minerals: calcium, iron, magnesium, phosphorus, potassium and sodium. It is a source of protein and vitamins A, B1, B12, C, E, F, K, PP.

The calorie content of kombu seaweed is 77 kcal/100 g of product – much higher than that of other seaweeds and marine plants. However, it can also be included in the menu of people prone to diabetes.

It is quickly satiating due to its high fiber content. It also contains the brown pigment fucoxanthin, which stimulates the breakdown of triglycerides. Its mild diuretic effect is due to the potassium in its composition. Glutamic and aspartic acids, alanine, predominate among the amino acids.
