The artichoke ( Cynara cardoon var . scolymus ) is a cultivated edible thistle that originates from the Mediterranean and is often confused with a vegetable. Due to its medicinal properties, it has been used for centuries in holistic medicine. Due to the valuable compounds it contains, artichoke extract is gaining increasing popularity as a dietary supplement.

Chemical composition of the plant:

Cynarin is the main chemical constituent of the artichoke, with most of it found in the pulp of the plant, but also in its leaves and stem. The chemical composition also includes the bioactive agents apigenin and luteolin. The total antioxidant capacity of the artichoke flower heads is one of the highest. As a food, the edible part of the plant contains a large amount of fiber and small amounts of protein and fat. The cooked artichoke is a rich source of folic acid, magnesium, sodium, phosphorus and a moderate amount of vitamin K.
