Matcha is a green tea that is made from the young leaves of the tea plant Camellia sinensis. The tea plants are shaded for the last two to six weeks before harvest, which slows the plant's growth and stimulates the production of chlorophyll and amino acids such as theanine. After the tea leaves are harvested, the stems and veins are removed and the leaves are ground into a fine powder known as matcha.
