This multifunctional sugar is a disaccharide consisting of two glucose molecules. When metabolized, trehalose releases both molecules – twice as much as glucose.

This is converted into quick energy. Trehalose is also called "mushroom sugar" because it is found in significant amounts in certain mushrooms. It is also found in some yeasts, seeds, algae, and so-called "resurrection plants," which grow in the desert and can survive long periods of drought. As a sweetener, trehalose does not interfere with natural flavors or cause the rapid rise in blood sugar that occurs with sucrose. The enzyme that digests trehalose is found primarily in the small intestine, meaning it is not fully metabolized for up to 2 or 3 hours after digestion. This slow process explains the high energy levels that trehalose can sustain.

Trehalose tips: For cooking and baking, gradually replace sugar with trehalose. Since trehalose is only half as sweet as sugar, you can replace only part of the sugar in your recipe with trehalose. For example, try the following ratio: 1 tablespoon sugar to 2 tablespoons trehalose. Experiment until you find the best option for you. Note: trehalose will not brown like sugar, which can be overcome by leaving some sugar in the recipe and/or by brushing the outside of your baked goods with a simple sugar solution.

Mix one scoop (5g) into your favorite food or drink. Replace sugar in a ratio of approximately 2:1, e.g. 2 teaspoons trehalose for 1 teaspoon sugar. A measuring spoon is included.
